The Best Way To Use Peanut Butter & Jelly EVER

I wanted to go big for a holiday as major as National Peanut Butter and Jelly Day (which is today!). While some people try to overcomplicate a classic (peanut butter and pickle sandwich, anyone?), the words "Peanut Butter and Jelly Sundae" kept playing in my head on loop. Lucky for me, an advance copy of Big Gay Ice Cream's new book (being released on April 28th) landed on my desk. I get A LOT of food/cookbooks, and while most of them are great, Big Gay Ice Cream's is seriously awesome. I developed a big crush on them while reading their book, and I finally built up the courage to call and ask if they would create a peanut butter and jelly ice cream sundae for us. To my absolute delight, they agreed, and sent me back the most incredibly fun, mouth-watering recipe. Oh, and that's not all. The best part is that all of the ingredients listed here are store-bought — no complicated prep or pre-baking required. Just freeze, mix, thaw, serve, and SHOVE IT IN YOUR FACE.

PB&J Ice Cream Sundae
Makes 3 pints (3/4
quart) 

Ingredients
For the ice cream:
2 pints premium
strawberry ice cream
1/2 cup peanut
butter morsels/chips
1/4 cup white
chocolate chips
1/4 cup unsweetened
coconut flakes
1/4 cup smoked
peanuts
1/4 cup toffeed or
candied peanuts
1 dollop of Skippy
smooth peanut butter 

For the toppings (optional):
Marshmallow fluff
Strawberry jam
Peanut butter 

Instructions
1. Thaw the ice cream for
30 minutes in the refrigerator. 

2. Freeze all of the
toppings (except the peanut butter) in the freezer for 30 minutes.

3. Combine the ice cream with
all of the toppings (except the peanut butter) in a large mixing bowl. Fold gently to
evenly combine the toppings.

4. Add one dollop of
peanut butter and slowly fold to distribute throughout the ice cream.

5. Place ice cream in
an airtight container and freeze for at least 4 hours. 

6. To plate: Mix one big dollop
of strawberry jam with 1 tablespoon hot water to create a pourable strawberry
sauce. 

7. Add a dollop peanut
butter and marshmallow fluff onto the bottom of a bowl and spread with the
back of a spoon.

8. Scoop the ice cream into
bowls. Pour the strawberry
sauce over the top. Enjoy!
