1/2 cup (4 ounces) non-hydrogenated vegan margarine (Recommended: Earth Balance)
1/2 cup sugar
1 teaspoon vanilla
1/8 teaspoon orange oil (or more to taste)
2 teaspoons orange zest
1/3 cup soy milk
3/4 cup all-purpose flour
1 1/3 cups whole wheat pastry flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup dried cranberries
