1 Great Outdoor Bar & The Recipe To Its Best Summer Cocktail!

While many of our favorite seaside towns have become total scenes, some of our best summer weekends are actually happening in the city. After the see-and-be-seen flock has fled, the city feels, dare we say it: mellow. But, being summer, we still crave a fun, beachy vibe and thanks to Gilligan’s we have it right here in Soho. The pop-up alfresco bar and eatery is located in The Yard of the Soho Grand Hotel by the team behind last year’s Montauk pop-up, Moby Dick’s. With picnic tables set up under ivy-covered trellises, a pebble beach, and three-bars all designed to look like beach-town watering holes, you almost forget you’re downtown. A wood-burning oven serves up delicious pizzas with herbs from the Soho Grand’s rooftop garden. Veggies from Long Island farms and roasted whole fish specials from local fisherman lend the dishes that distinct summer flavor.

But it’s the cocktails that have us wanting to go back the most. The Watermelon Margarita is so killer, we even scored the recipe:

In a blender with ice, add:
4 chunks of watermelon
Juice from ½ a lime
2 ounces of Milagro Blanco Tequila
2 ounces and 1 ounce Original Combier
Blend and serve with a watermelon wedge
Then sit back in the sun, sip, and enjoy!
