HAVE YOU EVER TRIED STRETCHY ICE CREAM?

Republic of Booza puts a modern twist on a Middle Eastern tradition. This type of “stretchy” ice cream is called Booza.

It uses natural ingredients called sahlab and mastic, which gives it that elastic consistency.

The traditional flavor is called Qashta, which translates loosely as candied cream, but Republic of Booza wanted to try new and inventive flavors.

There are 17 different flavors and the menu is divided into three categories: Classic, Global, and Experimental.

Flavors include: Salted Caramel, Saffron Peppercorn, Mint Tahini Chip, and Chocolate.

Its unique, creamy, elastic-like consistency allows it to resist melting and stay frozen longer.

Booza is one of the oldest forms of ice cream, dating back to 1500AD.
