They say when life gives you lemons, make lemonade. Well, for one chef, when life gives you jail time, make ice cream.
Twenty-six-year-old Aleric "AJ" Constantin was arrested in Miami in late June for allegedly selling ice cream out of a refrigerator he installed to the back of his bike sans license during Critical Mass, an organized riding event that occurs on the last Friday of every month in many cities. He only spent a little over a day in jail, but instead of just letting the experience slide, he created Po-Po Pops as a hilarious nod to the cops that cuffed him.

The cheeky popsicles are a mix of Krispy Kreme-flavored ice cream, candied bacon, and fudge, which sounds almost too good to be true. Sorry, cronuts and frozen S'mores, but these popsicles may be the last word in crazy desserts. The creator clarifies, "It's not making fun of cops, but I just thought of the typical clichés — pigs, so bacon, Chief Wiggum from The Simpsons sitting around eating doughnuts and coffee and not doing much else." Actually, that sounds a little familiar to us, too.
Those around Miami can get their hands on the Po-Po beginning in August for $4 a pop. Think we should get an editor on the ground to cover as the situation develops?
