We love a good Cup 'O Noodles but for a tastier (healthier) meal that’s just as lazy and satisfying, we whip up a bowl of this single-serving chicken noodle soup. Think of it as your perfect “Chicken Soup For The Solo" diner. Just warm sliced celery and carrot in chicken broth, then add noodles, shredded rotisserie chicken and herbs. Perfect for a cold night in!
Feeling extra sloth-y? Boil a handful of noodles right in the broth (just add a little more water). You can also tweak the ingredients to customize your perfect bowl: Swap in frozen cooked rice for noodles, or maybe use lime juice instead of lemon, and top with tortilla chips for a Mexican-inspired twist.

Chicken Soup For One
Serves: 1
1 1/2 cups chicken broth
1 medium carrot, peeled and thinly sliced
1 medium stalk celery, thinly sliced
1 to 2 teaspoons fresh lemon juice
2 cups cooked egg noodles or fusilli
1 to 2 cups shredded rotisserie chicken
Kosher salt and freshly ground pepper
Snipped chives, for topping (optional)
Bring the chicken broth and 1/2 cup water to a simmer in a small saucepan over medium heat. Add the carrot and celery and simmer until slightly soft, about five minutes.
Stir the lemon juice, cooked noodles, shredded chicken, and a pinch each salt and pepper into the simmering broth. Ladle into a bowl. Top with snipped chives, if desired.
