Behold, A Healthy Version Of The Shamrock Shake

After a good workout, I usually need to consume something that is healthy and fast. When I saw this Shamrock Smoothie on V-Lish, I knew it was the perfect way to kick off St. Patrick's Day and replenish my body with Vitamins A, C, E, and K and nutrients like manganese, folate, and iron. I love that it combines the best qualities of one of our favorite childhood drinks — the delicious, minty goodness of a McDonald's Shamrock Shake — with all the healthy qualities of a smoothie. The best part about this version — created by Hayley Ryczek of Health Starts In The Kitchen — is that it doesn't require any leprechaun magic skills (nor the 30+ ingredients of a McDonald's Shamrock Shake) to make at home. Just pile the six ingredients in your blender, blitz until smooth, and enjoy! Shamrock Smoothie
Makes one smoothie

1/2 frozen banana
1 cup of ice
1 cup coconut milk (or other nondairy milk of your choice)
1 large handful of baby spinach
1/2 tsp vanilla extract
1-5 drops peppermint essential oil, to taste
Whipped cream or Coconut Whipped Cream 1. Combine banana, ice, coconut milk, spinach, vanilla, and peppermint essential oil in your blender and blend until smooth. 2. Garnish with Coconut Whipped Cream, if desired. 3. Enjoy!
