For the longest time, I’ve wanted to try some of the most popular pins on Pinterest and see whether they work or not. Some just seem too good to be true. When I saw a certain ice cream sandwich trick circulating around my favorite inspiration site, I knew I had to try it myself. The original photo I saw showed a girl cutting through a cardboard pint of ice cream, created circular discs of ice cream. She then placed the ice cream in between two cookies and had her ice cream sandwich, easy as that. So, I bought my supplies and put this popular pin to the test…

The Ice Cream Sandwich Trick

Ingredients
1 carton of ice cream of your flavor of choice (I used strawberry, vanilla bean, and green tea)
8 large cookies of your flavor choice (I used some delicious creations by Lauren Lowstan)

Instructions
First, use your knife to make an incision in your ice cream pint, dragging it vertically from the top of the pint to the bottom. It’s easiest to follow the line where the cardboard meets and overlaps.
Using your knife, cut through about a fourth of the way into the ice cream carton. I found that the best discs for my large cookies came from cutting the top of the pint because that’s where it’s thicker. Cut all the way through until you have a disc.
This trick totally worked, and the sandwiches turned out pretty great! But, like I suspected, it wasn’t quite as easy as Pinterest made it seem. Here are a few of my tips for perfecting this trick:
Make sure the first incision you make (the vertical one from top to bottom) is deep enough that you will be able to peel off the cardboard once you have your disc.
Keep your ice cream in the freezer until the minute before you are ready to make your sandwiches. You want them to be totally frozen when you are cutting, or else they will melt and won’t cut through as well. I made this mistake and my ice cream was a little melted by the time I tried to cut my last disc.

Put your sandwiches back in the freezer for about 30 minutes after they are assembled so that they stay frozen. You can also make a bunch in advance and put them in plastic baggies to have on hand when you need a dessert in a pinch!
