Muesli Monday: 5 Fast Recipes For A Better Breakfast

Tell us if this sounds familiar: It's a weekday morning. You’re already running 15 minutes late. Your hair hasn’t been washed in three days, and your apartment keys are nowhere to be found. On mornings like that, the last thing on our minds is a balanced and healthy breakfast. Yeah, yeah, we know that breakfast is the most important meal of the day, but sometimes it's just not convenient, so we grab whatever we can on the way to work (and usually, we're starving by 10:30 a.m). Seven Sundays, a muesli company out of Minnesota, is committed to changing that. Their mission is to reinvent the way we think about (and enjoy) breakfast. 3-Ingredient Gluten-Free Muesli Bars
Makes 9 bars

Ingredients
2 cups Seven Sundays Gluten Free Blueberry Chia Buckwheat muesli
1/3 cup maple syrup
2 tbsp coconut oil
Melted dark chocolate for
drizzling (optional)

Instructions
Heat
the coconut oil and maple syrup in a small saucepan until melted. Pour mixture
over muesli and stir to coat. Spread muesli into an 8x8-inch square pan lined with
parchment paper and pack down. Bake for 18 minutes at 325ºF. Cool before
cutting.

Easy Crispy Muesli Cakes
Makes 4 cakes

Ingredients

2 cups soaked Bircher muesli (1 cup Seven Sundays Bircher muesli
+ 1 cup milk, soaked overnight)
1 egg
1 tbsp coconut oil

Instructions

Whisk
the egg and fold it into the overnight-soaked muesli. Form four patties. Heat
coconut oil in a frying pan over medium-high heat. Cook the muesli patties on each
side for 3 to 4 minutes.

Serving suggestions:
Top with a scoop of Greek yogurt and a drizzle of maple syrup
Serve over a shredded Granny Smith apple
Top with a scoop of almond butter and splash of cream

Savory Muesli With Kale & Mushrooms
Serves 2

Ingredients
1 cup Seven Sundays Vanilla Cherry Pecan muesli
1/2 cup water
1/2 cup coconut milk
1 tsp curry powder
1/2 tsp salt
1 tbsp coconut oil
1/2 small chopped onion
Handful of chopped, dark green kale
Handful of sliced mushrooms
A fried egg or sprouts (optional)

Instructions
Mix
muesli, water, and coconut milk in a medium saucepan. Heat to boiling and then
reduce heat and simmer for 2 to 3 minutes. Add curry powder and salt. Mix well. In a separate pan, sauté onion and mushrooms in coconut oil until soft (about 5
minutes); add kale to pan for 1 minute. Scoop seasoned muesli into bowls and
top with kale/mushroom mix. Top with a
fried egg or sprouts if desired.

Berry & Toasted Muesli Super Smoothie
Serves 2 Ingredients
1 cup Seven Sundays Original Toasted muesli
1 cup almond milk
2 cups fresh berries (blueberries, strawberries, raspberries, etc.)
Juice from 1/2 lime
Drizzle of maple syrup Instructions
Blend all ingredients together in a food processor or blender. Serve chilled.

Overnight Soaked Bircher Muesli (Vegan)
Serves 2

Ingredients
1 cup Seven Sundays Bircher muesli
1 cup almond milk
Handful of blueberries

Optional

2 tbsp maple syrup
Pumpkin puree
Almond
butter
Apple sauce or jam

Instructions
Mix
all ingredients in a bowl or large Mason jar. Store covered overnight and serve
chilled the next morning.
