Remember the days when kale didn't reign supreme? With health trends constantly evolving, Shape spoke with some of their favorite food bloggers to see what's in store for 2015 — and their predictions might surprise you. First, cauliflower could dethrone kale this year. Anjali Shah of The Picky Eater explains, "Cauliflower is the superfood for 2015. You can roast it, sauté it with spices, or even puree it and sneak it into less healthy foods like mashed potatoes, pizza, and mac and cheese."

Things are also looking up for those with allergies because Tigernuts — which are actually not a nut at all — are expected to be big this year. This flavorful, earthy root vegetable originates from Spain and could become a widespread snack and baking ingredient. Ksenia Avdulova of Breakfast Criminals says, "Tigernut milk will become a popular alternative to those who are lactose and nut intolerant."
And, there's spiralizing, perhaps the most interesting trend of the year. Ali Maffucci of Inspiralized predicts that cutting vegetables into strings — a.k.a. spiraling — will reach new levels of popularity. This year she's expecting restaurants "to use spiralized vegetables and fruits on their menus — not just as sides or garnishes, but as main courses and filling appetizers." Sounds like a pretty fun way to eat vegetables.
