America loves mayonnaise. We fork over $2 billion for it every year — more than twice what we spend on ketchup. But, mayo isn't exactly healthy: Typically made of egg yolks, oil, and vinegar, it can be high in fat, calories, and sodium. Light, low-fat, and fat-free mayos aren't necessarily better — often, they contain added sugar and artificial ingredients.
Now, a new company called Primal Kitchen has come out with a mayo with some unique health benefits. It contains just five ingredients: avocado oil; organic, cage-free eggs; organic egg yolks, organic vinegar; and salt. Avocado oil is rich in heart-healthy monounsaturated fat and, according to a study from the Journal of Nutrition, it can help your body absorb more of the antioxidants in veggies, including alpha-carotene, beta-carotene, and lutein. Primal Kitchen's mayo, available on Thrive Market for less than $10/jar, is the first product from Mark Sisson's new line of condiments and sauces. Sisson is an expert on the Paleo movement and has written numerous books on the topic, including The Primal Blueprint.
The mayo is, as you'd guess, Paleo-approved; it's also free of sugar, dairy, gluten, and soy. You'll still need to enjoy it in moderation, but it's a delicious choice for anyone looking for less-processed versions of their favorite condiments.
